Chipotle Mayo BLT+A is a flavorful spin on a classic BLT; plus the brioche bun takes this sandwich from average to gourmet. This chipotle mayo is quick to whip up and adds a subtle smokey and spicy notes. I am a fan of avocado on everything, must be the millennial in me, so of course I had to add a ripe hass avocado to this delicious BLT.


Chipotle Mayo BLT+A

Serves 4

Prep Time 15 minutes

Cook Time 10-15 minutes

Ingredients:
12 slices of thick cut bacon
1/3 cup mayonnaise
2 teaspoon lemon juice
1/4 teaspoon ancho chili powder
1/4 teaspoon chipotle chili powder
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
4 brioche buns, toasted
2 large tomatoes, slightly firm
2 hass avocados, ripe
1 head butter lettuce, leaves rinsed and dried

Directions:

1. Preheat oven to 375°F/190°C. Line baking sheet with foil. Cook bacon until desired crispiness, approximately 10-15 minutes. Remove from baking sheet and place on a plate with layer paper towels to absorb extra grease.

2. In a small mixing bowl or a glass measuring cup add mayonnaise, lemon juice, ancho chili powder, chipotle chili powder, garlic powder, and kosher salt. Whisk until all spices are incorporated into the mayonnaise.

3. Slice tomatoes and avocado. Sprinkle tomatoes with a pinch of kosher salt.*

4. On the bottom of the brioche bun layer 2 or 3 tomatoes, half an avocado, 3 slices of bacon, and a few leaves of bib lettuce. Spread a good spoonful of chipotle mayo on the top of the brioche bun and place on top of your sandwich. Repeat to make the remaining sandwiches.

Pro tip:

*Salting your tomatoes will make them more flavorful and will make them taste sweeter.
