Ahi Tuna Poke Bowl with Spicy Mayo
Ahi Tuna Poke Bowl with Spicy Mayo is a delicious and fresh recipe to spicy up your week night dinner routine. The homemade Spicy Mayo is super easy to whip up and helps you bypass all of unwanted ingredients in the store bought version. Serves 2
Ingredients:
1/3 cup mayonnaise
1 tablespoons sriracha
1 tablespoon lime juice
3/4 - 1 lb Ahi Tuna steak*, cubed
2 cups short grain rice, cooked
1 English cucumber, shaved
1 medium carrot, shredded
1/2 cup shelled edamame
1/2 hass avocado, sliced
1 green onion (green only), bias chopped
1 tablespoon furikake seasoning
1 tablespoon crispy onion topping
Directions:
1. Prepare the ingredients as listed above.
2. In a small bowl whisk together mayonnaise, sriracha, and lime juice. Place in refrigerator until ready to use.
3. Divide the rice evenly between the serving bowls. Top each bowl with half of the Ahi Tuna, cucumber, carrot, edamame, avocado, green onion, furikake seasoning, crispy onion, and spicy mayo.
Pro Tip: Raw fish can be a scary thing to buy at the store. It is never a bad idea to do your research and educate yourself on the do’s and don’t’s of purchasing “sushi grade” fish. I have done my own research on this topic and I highly recommend you to do.
