Shrimp Scampi with Zucchini Noodles

This is a quick, healthy version of shrimp scampi. This Shrimp Scampi with Zucchini Noodles is a great one pot meal. 

Ingredients:

1 pound shrimp – peeled and deveined
1 pound zucchini noodles
2 tablespoons olive oil
2 tablespoons butter
3 garlic cloves – minced
1/2 teaspoon red pepper flakes
1 tablespoon lemon juice
1 teaspoon lemon zest
2 tablespoons flat leaf parsley – chopped  

Directions:

Heat oil in a large skillet on medium high heat. Season shrimp with salt and place into pan (shrimp should all be laying flat). Cook about 3 minutes total, flipping only once. Remove shrimp from pan. Reduce heat to medium. Add butter, garlic and red pepper flakes. Cook about 2 minutes. Add zucchini noodles, cooking for 3.5 minutes on medium and 2.5 minutes on high. (The 2.5 minutes on high is to help cook off the extra water from the zucchini, there should still be a light sauce in the pan from the olive oil and butter) Remove zucchini from heat, add lemon juice, lemon zest, parsley and shrimp. Toss ingredients together to combine and serve.
