Roasted Garlic Purple Potatoes

Roasted Garlic Purple Potatoes are a quick side dish to accompany any meal. I enjoy cooking with purple potatoes because they brighten up your plate and have greater health benefits than white or yellow potatoes.

Serves 2-4

Ingredients:
1 1/2lbs purple potatoes*, large diced
3 tablespoons olive oil
3 cloves of garlic, minced
salt & pepper


Directions:

1. Preheat oven to 350°F/177°C.

2.  On a lined baking sheet, coat potatoes with olive oil.

3. Season generously with salt and pepper.

4. Add minced garlic, toss till potatoes are generously coated.

5. Roast for 45 minutes or until browned and crisp, flip during cooking to ensure even cooking. Serve.

Pro Tip:

*Purple potatoes have two to three times more antioxidant activity than white or yellow potatoes, along with a variety of other health benefits.
