Lamb Kleftiko with Roasted Potatoes

Lamb Kleftiko with Roasted Potatoes is always a great one skillet oven meal. Super simple prep, put it in the oven, and serve. If you are looking for a quick meal it can’t get easier than this.  

Ingredients:

2 small lamb shanks 12 to 15 oz
2 Lemons – juiced
2 tablespoons Olive Oil
6 Bay Leaves
2 tablespoons dried Oregano
1 head of Garlic – Cloves peeled and crushed
3.5 lbs waxy Potatoes – 1” pieces
5 Tomatoes – 1”pieces
Salt
Pepper
Feta – to garnish 

Directions:

Preheat oven to 350°F/177°C. In a cast iron skillet add olive oil, lemon juice, bay leaves, oregano, garlic 1 tablespoon salt and pepper.  Add potatoes and tomatoes. Add lamb. Drizzle lamb with olive oil and salt. Add water. Cook for 1.5 hours covered with foil. Remove foil cook remaining 20-30 minutes. Potatoes will be soft and lamb should be at minimum 145°
