Chicken, Orzo & Artichoke One Pot Meal
Chicken, Orzo & Artichoke is my favorite one pot meal. It is an all in one dinner that is and easy dish to whip up after work or to serve as the perfect centerpiece of a great meal with friends.
Ingredients:
2 pounds chicken thighs, skin on and bone in
Kosher salt
3 tablespoons olive oil
2 tablespoons butter
3 fresh cloves garlic, minced
3 lemons, two sliced, one zested and juiced
1/2 cup white wine
1 cup orzo pasta
1 - 11 oz can artichokes quartered, rinsed and drained
2 1/2 cups low sodium chicken broth
Fresh dill for garnish
Directions:
1. Preheat oven to 400°F/204°C. Season chicken generously with salt.
2. Heat olive oil in an oven safe skillet over medium high. Cook chicken skin side down for 4 minutes, flip and cook other side for 5 minutes. Remove chicken from pan.
3. Melt butter in pan. Add garlic and lemons. Cook for 2-3 minutes. Remove lemons.
4. Add wine, to deglaze pan. Add orzo, lemon juice, artichokes. Cook for 1-2 minutes until orzo is golden brown and toasted.
5. Add chicken stock and bring to boil. Remove from heat. Add chicken and lemons.
6. Bake for 15 min and then top with lemon zest and dill.
